Enzymes
for Petfood Digest Production
Papain is
a broad spectrum protease that is active over a large pH
and
temperature range. Papain is active on a variety of substrates
such as liver, lung, or other viscera. It is a very heat
stable
protease and can easily accommodate reaction temperatures
in the range of 140-160 degrees F. The inactivation temperature/conditions
are 185 – 190 degrees F for 10 minutes. These conditions
may vary depending on other processing parameters.
A model system for the production of digest is to finely
grind the meat product or other protein. Water may or may
not be needed depending on if the meat product is frozen
and needs to be thawed or if it fresh. Add the enzyme of
choice at a rate of .1% to .25% based on the total weight
of the meat. Addition of the enzyme maybe done at the start
of the cook cycle or at the point the slurry reaches the
desired temperature. The enzyme is inactivated by raising
the temperature of the slurry and holding for 10 minutes.
Enzymes
other than papain may be more effective for certain types
of byproducts or may give a different palatability result.
LIQUIPANOL® T-100: A liquid papain
preparation standardized at 100 TU/mg.
LIQUIPANOL® T-200: A liquid papain
preparation standardized at 200 TU/mg.
ENZECO® PURIFIED PAPAIN RS 600: A
low sulfite papain. The activity is in
the range of 450 – 650 TU/mg.
ENZECO® PURIFIED PAPAIN CONCENTRATE:
A powder papain. The activity ranges from 500 TU/mg and up.
Other Enzymes
ENZECO® ALKALINE PROTEASE L-600 FG: An
alkaline protease with no/very low amylase side activity.
Liquid only.
ENZECO® NEUTRAL BACTERIAL PROTEASE BA 170
Derived from B. amyloliquifaciens pH optimums
in the range of 7.0 - 9.5
