As the name implies, these enzymes break down proteins. The listing is divided by the source of the enzyme, animal, fungal, bacterial. These enzymes have various pH, temperature, and other operating parameters. Please contact EDC for specific recommendations.



Animal Origin

ENZECO® CHYMOTRYPSIN 1:1
Derived from bovine glands with a ratio of 1 trypsin unit: 1 chymotrypsin unit per milligram. The activity is approximately 1000 trypsin units and 1000 chymotrypsin units per mg.

ENZECO® TRYPSIN 1200
Derived from porcine glands with an activity of 1200 trypsin units/mg with chymotrypsin levels of 200 - 300 units/ mg.


Botanical Origin

ENZECO® BROMELAIN
Protease from the fruit of pineapple (Ananas comosus) characterized by its controlled selective hydrolysis over a wide range of conditions.

ENZECO® FICIN
A protease derived from the latex of fig tree Carica glabrata. It has a lower temperature of inactivation than papain or bromelain and a faster rate of reaction.

PANOL®
Purified standardized soluble papain powder obtained from the fruit of papaya (Carica papaya). Will rapidly hydrolyze a variety of proteins over a wide range of conditions.

LIQUIPANOL®
Special formulated liquid papain.

ENZECO® PURIFIED PAPAIN
Papain powder available over a wide range of activities to pure, unstandardized form.

ENZECO® PURIFIED PAPAIN RS 600
A purified papain produced from latex that has no added sulfites during the collection or processing steps.

ENZECO® DUAL PROTEASE
A special combination of bromelain and papain. Particularly useful for tenderizing seafood such as clam and squid. Available as a powder.

ENZECO® TENDERIZER SERIES
Standardized food grade single and multiple enzyme systems especially designed to hydrolyze a variety of meat proteins. Available as powders and liquids.

Microbial, fungal

ENZECO® FUNGAL ACID PROTEASE
Fungal proteolytic enzyme derived from A. niger with an optimum pH of 2.5 to 3.0. Available as a powder.

ENZECO® FUNGAL PROTEASE 100
A fungal protease system derived from A. oryzae with acid and neutral proteases. This system is particularly high in leucine aminopeptidase activity as well as acid GTG-ase activity. Available as a powder.

ENZECO® FUNGAL PROTEASE 180
A fungal protease system from A. oryzae with low to moderate amylase side activities. Available as a powder.

ENZECO® FUNGAL PROTEASE 400
A fungal protease system from A. oryzae with acid and neutral protease components. There is considerable LAP and GTG-ase side activity. Significantly higher milk clotting activity than Fungal Protease Concentrate.

ENZECO® FUNGAL PROTEASE CONCENTRATE
A highly concentrated fungal protease enzyme derived from A. oryzae with only trace amounts of amylase activity. Available as a powder.

ENZECO® FUNGAL PROTEASE SERIES
Custom formulated powder enzyme preparations with specific activity, packaging or standardizing agents.

ENZOBAKE®
Concentrated powdered enzyme preparation derived from A. oryzae with balanced protease and alpha amylase activity. It is ideal for baking applications.

ENZOPHARM®, ENZOPHARM® PLUS
Protease blends with amylase and other activities added. The products are designed for the food supplement industry.

Microbial, bacterial

ENZECO® NEUTRAL BACTERIAL PROTEASE 160K
Neutral bacterial enzyme derived from B. subtilis. Standardized at 160,000 PC per gram. Kosher certified upon request. Allowed for use in meat tenderizing applications by the USDA starting in 1999. Essentially free of amylase side activity.

ENZECO® NEUTRAL BACTERIAL PROTEASE BA 170
This is a liquid neutral/alkaline protease, kosher with a pH range of 6.0 to 9.5 and an optimum temperature range of 40 - 60 degrees C. Very effective hydrolysis of vegetable proteins such as gluten.

ENZECO® GLUTAMINASE ADK
A neutral protease derived from Bacillus subtilis, with 100 u/g of glutaminase activity. It works best in combination with another exo protease containing product such as ENZECO® FUNGAL PROTEASE 400. The optimum pH is neutral and the optimum temperature range is 50 - 60°C.

ENZECO® ALKALINE PROTEASE L-600
Highly stable liquid proteolytic enzyme with an optimum activity at pH 9.5.

ENZECO® ALKALINE PROTEASE 44MG
A microgranulate form of our 660-L liquid.

ENZECO® ALKALINE PROTEASE 660-L
An alkaline protease liquid with optimum performance in the range of pH 7 - 10.5. Various side activites such as amylase are present.
